Crazy Hip Blog Mamas, home of a huge blogroll and tons of great blog inspiration, does a Recipe Rally every Tuesday. Today, they’ve posted a Taco Dip recipe and invited the rest of us to post our own dip recipes. I thought I might participate today for something fun…, so here’s my fav:
Black Bean Salsa
- 3 (15 ounce) cans black beans, drained and rinsed
- 1 (11 ounce) can Mexican-style corn, drained
- 2 (10 ounce) cans diced tomatoes with green chile peppers, partially drained
- 2 diced tomatoes
- 2 bunches green onions, chopped
- cilantro leaves, garnish
- splash of olive oil
- a splash of basalmic vinegar
- salt and pepper, to taste
- In a large bowl, mix together black beans, Mexican-style corn, diced tomatoes with green chile peppers, tomatoes and green onion stalks. Add oil, vinegar and seasonings. Garnish with desired amount of cilantro leaves. Chill in the refrigerator at least 8 hours, or overnight, before serving.
Simple, huh? And not so bad for you, either!

i loooooooove black bean salsa. except i can’t eat it any more cuz i shouldn’t have tomatoes. :-(
